I have been baking freshly milled sourdough Einkorn bread awhile now. I add flaxseed, hempseeds, goji berries, pumpkin seeds 90 % hydration. or rosemary and garlic or cinnamon and monk fruit powder. Also, Einkorn banana bread is die for. It's really delicious! So flavorble!! Thanks for all your sharing!!
Why don't you use a fabric tape measure, that will bend in the tin better?
I prefer this. It's more convenient because it's retractable.

What do you do if your in a family that eats pita bread as a staple. We can go thru store bought bread like 3 to 4 bags a week. Like I need to make 50 pitas! 😅 Just to stick some in the freezer for later and avoid cooking them every single day! I'm on the hunt to make making lots of pitas as simplified as possible. Thanks for the video!
Lovely recipe but would prefer if you just didn’t mention calories or skipping meals. It’s not a healthy mindset to promote to your viewers. Everything in moderation.

Charlie, are you using salted butter in this recipe? The written recipe refers to "butter". In the US, the "Gold" Kerrygold package is salted. 🧂🧈

@@ChainBaker 😉 I think salted butter would probably help with balancing the sweetness of white chocolate and brown sugar. I’ll use Kerrygold salted to make this for our earnings call this week.

In addition to the recipe for making the blondies, I really appreciate your tips on how to brown butter. That technique will come in handy for other recipes that call for browned butter.
I love you Charlie, but a blondie is not a white chocolate brownie. It’s a chewy bar cookie with predominantly brown sugar for butterscotch flavor. Unlike a brownie leavening is usually included as the texture is chewy vs fudgy and rich as brownies are and you want some lift, albeit minimal. I’m a blondie lover who will pick them over a brownie every time, so my feelings on this are very strong! 😂 Having said that, these sound like delicious white chocolate brownies.

or your bread, how do u make it so the dough doesnt stick to your hands? im working with around 60% hydration and half of it is on my hand, no matter how much i knead it just doesnt get to your breautiful dough balls
I just don't knead the dough. Perhaps your flour is weaker and that is why it's sticky. Try the no knead method and if that does not help you can either get stronger flour or lower the hydration even more.

The price of vanilla! Never cheap but I was horrified at how much it's increased. In the 80s and 90s, "condensed" butter was available for pennies (European butter mountain). Alas, it has disappeared 😭 Another recipe I'll be trying - can never get my brownies that luscious, fudgy texture. Thanks for this one. 😊
Looks very good, but I will likely never make it due to how rich it is. If you are looking for some other recipes, you might want to check out Rugelach (rogaliki; in romanian "cornulețe" which basically means little croissants). Popular ones are with walnuts, turkish delight or thick jam.

From the cross section, it looks like all the cranberries sunk to the bottom. Is there any way to keep them evenly suspended in the batter?
Perhaps if they were sprinkled onto the batter when it's already in the tray. I don't mind them being at the bottom.
You can sprinkle them with flour before putting them into batter at the end of the process.

Naturally leavened dough has a very distinct flavour. You can't achieve the same quality with commercial yeast.

This brownies also should be baked above 94C? I tried this and turned out chewy, gooey, super addictive! Much better than other recipes which calls for an electric mixer. But the inside of my brownie is different from yours . Yours looks more moist. I baked Until 95c.
Yeah 94c is a good temp to aim for when it comes to cakes as well as breads. More moist = more better I say 😄

Every bit of water out of every ingredient makes up the total hydration. You can definitely turn this dough into rolls. I will post a video for exactly that on the 26th of May ✌

For sure. You can roll the dough out flat and cut it into any shapes you like.

If you don’t add seeds should I reduce the water ? I made this yesterday without seeds and when I cut it open today the crumb looked like sourdough crumb. Very open. It was very soft inside
Sounds like a great result! You can lower the amount of water, but obviously it worked out well so there is no reason to do so unless you want a tighter crumb.
@@ChainBaker Your recipe was an 81% hydration. I had to check my math and I assumed it was the seeds that needed more water. I'm going to make this a few times with different hydration levels and see which one I like best. This might be my new way of making bread. Do you think that I should cut back on the yeast a little ? For a tighter crumb which would be better, less water or less yeast ?

@@ChainBaker Second loaf at 78% hydration and same amount of yeast 3.3g, it is rising a lot faster than the last loaf so I gave it 2 more folds in the last 24 hours. Going in the oven in 10 minutes. I am using 500g of flour, 390g water 3.3g yeast and 8g salt

You could. Let the dough bulk ferment at room temperature for around 2 - 3 hours and then continue as per recipe. The final proof will take less time.

You can. Yeast does not need sugar.

All of this then ferments for two hours, and the bread is ready for baking.
